Ingredients
1/4 cup Honey
1/4 cup Maple syrup
1/2 tsp Ground cinnamon
1 cup Dried apples
3 - 4 lbs Boneless pork loin roast (single loin)
1-2 tbsp Chili powder
1 tbsp Paprika
1 tsp Ground cinnamon
1/2 tsp Salt
1/2 tsp Pepper
1/4 cup Apple jelly
1/4 cup Honey
Preparation
Combine 1/4 cup honey, maple syrup, and 1/2 tsp cinnamon in a saucepan. Heat through. Add apples and cook, uncovered over med-low heat for 10 minutes, stirring ocasionally. Set aside. Trim fat from pork, removing silvery strands underneath the fat.Butterfly the loin, insuring not to cut through. Spread the loin open. Spread apple mixture evenly over the loin. Fold the meat over the filling. At about 1-inch intervals, wrap string around roast and tie to secure stuffing. A meat thermometer may be inserted now.
Combine chili powder, paprika, 1 tsp cinnamon, salt, and pepper. Rub over outside of meat. Melt together apple jelly and honey in a small saucepan. See above for grilling instructions.
In a covered grill arrange medium coals on both sides of the grill. Test for medium low heat where meat will cook. Place meat on a rack in a roasting pan. Place pan on grill rack not directly over the coals. Cover and grill till thermometer registers 160 deg for medium doneness, about 1 1/4 to 2 1/4 hours(or less). Add coals every 20 to 30 minutes as necessary to maintain med-low heat. Brush with honey mixture the last 10 minutes of grilling.
