Ingredients
2 lbs Beef Stew Meat
1 tsp salt and pepper
2 green onions, chopped
1 glass red wine
2 carrots, sliced
2 onions, chopped
1 clove garlic, crushed
1bay leaf
sprig parsley
pinch tyme
2 cups beef stock
bacon drippings
Preparation
Put meat, green onions, salt and pepper, and wine together and let stand for 2 hours.
Drain, saving marinate, and brown meat on all sides in hot bacon drippings. Transfer to casserole with carrots, onions, garlic, bay leaf, parsley and tyme. Add the wine in which the meat was marinated and 2 cups of stock.
Cover and cook slowly in 325 deg oven for 3 hours, stirring once or twice. Skim off any excess fat.
