Mediterranean Garlic Chicken

Ingredients

  • 2 lb Chicken Breasts, boneless, skinless

  • 2 lb Potatoes, small red, cut in 1/8ths

  • 2 Jar 8 1/2 oz Sun-Dry Tomatoes in Olive Oil

  • 3/4 Cup Kalamata Olives - cut in half

  • 1 1/2 Can Chicken Broth

  • 1/2 Cup Lemon Juice

  • 2 tbsp Crushed Garlic

  • 1 tsp Dried Oragano

  • 1 tsp Tyme

  • 1 tsp Italian Seasoning

  • Olive Oil

Preparation

Cube the chicken into bite sized peices. Cut the potatoes in small bite sized pieces (about 1/8ths). Cut the tomatoes into small pieces or chop as desired. Add herbs or garlic as needed depending on what is missing in jar.


Cook potatoes in the olive oil from tomatoes (add additional if needed) over high heat in a covered pot for about 7 minutes. Add chicken, and if needed a little more olive oil, and continue to cook on high for an additional 10 minutes.


Stir in remaining ingredients; cover and cook over low-medium heat for 10 minutes more or until potatoes are tender.
