Ingredients
6 Garlic cloves
6 Peppercorns
2 tsp Salt
1 1/2 tsp Olive oil
1 1/2 tsp White Wine Vinegar
1 tsp Oregano
1/4 tsp Pepper
3/4 Cup Pimento stuffed Green Queen Olives
4 lb Pork Loin
Preparation
Blend Garlic, Peppercorns, Salt, Olive Oil, Vinegar, Oregano and Pepper in a blender or small food processor.
Remove excess fat from roast if needed; make slits 1 1/2 in. wide by 1 in. deep over top (fat) side of pork. Press garlic mixture then Olives into slits; cover and refrigerate overnight.
Preheat oven to 350d eg. Cook Pork for about 35 minutes per pound or until meat registers 150deg on meat thermometer. Let stand 10 minutes before slicing.
