Our spaghetti(bolognese) sauce, we call it gravy. Freeze in small containers for smaller dinners.

Ingredients
1 lb Ground round
1 lb Hot Italian sausage
3 - 4 Thin, bone in pork chops (about 1 lb)
8 oz Mushrooms
1 Med yellow onion
4 Garlic cloves
2 28 oz crushed tomatoes(San Marzano are best)
1 15 oz Tomato Sauce
1/4 cup Sugar
3 Tbsp Italian seasoning
3 tsp Basil
2 tsp Salt (taste before adding)
2 tsp Pepper
1 to 2 cups Red wine
2 Tbl Butter
Preparation
In a Dutch oven or heavy pot, brown pork chops. remove chops and set aside.
Cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Add pork chops. Season with sugar, basil, fennel seeds, Italian seasoning, teaspoon salt, pepper, and tablespoons parsley. Simmer, covered, over low heat for about 5 to 8 hours, stirring occasionally.
Wine and or butter can be added, during the last hour, to your taste. The butter can be used if the saucce is axidic and adds a nice glimmer to the sauce. Remove pork chop bones when done.
